Ingredients (Serves 1)

  • 100g tuna
  • 2 tsp olive oil
  • ½ tbsp lemon juice
  • ½ garlic clove
  • ¼ tsp oregano
  • 40g (¼ cup) red onion
  • 80g (½ cup) cucumber
  • 40g (½ cup) baby spinach
  • 40g (¼ cup) peppers
  • 85g (½ cup) cherry tomato
  • 50g feta cheese
  • 80g (½ cup) lettuce

Method
Step 1: Tuna
  1. Using canned tuna - drain the brine (saltwater)
  2. Place to the side for use later

Step 2: Salad dressing
  1. Whisk together the olive oil, lemon juice, garlic and oregano
  2. Place to the side for use later

Step 3: Vegetables + feta cheese
  1. Slice vegetables into the desired size
  2. Place to the side for plating
  3. Slice feta cheese into cubes or as desired

Step 4: Putting it all together
  1. Create a bed of lettuce by tearing leaves and stacking them around the plate
  2. Place the rest of the vegetables on top of the lettuce
  3. Place the tuna on top of the vegetables
  4. Place feta on the top
  5. Drizzle salad dressing on top
