Pan-roasted almonds and strawberry porridge

Ingredients (Serves 1)
- 250ml milk (of your choice, we use semi-skim)
- 2 tbsp (20g) almonds
- 85g (8) strawberries
- 30g raw oats
- Cinnamon, to taste
Method
Step 1: Oats
- The night before - add oats and milk to a bowl
- Place in the fridge overnight
Step 2: Strawberries
- The next day take frozen strawberries and add them to a small pot on medium heat
- Heat for approximately 3 - 4 minutes until you see a juice begin to develop in the pot. Once this happens - remove from heat.
Step 3: Almonds
- Using a non-stick pan on medium heat add almonds
- Heat almonds for approximately 4 - 5 minutes on medium heat, stirring occasionally
- You’ll know they are done when you start to smell a nutty smell and the almonds begin to brown
Step 4: Putting it all together
- Warm-up overnight oats in microwave on high for approximately 1 minute. Note: you can also leave the oats cold if you'd prefer!
- Add strawberries with the juice created
- Add almonds some cinnamon for some extra antioxidants and great taste
- Enjoy!
