Ingredients (Serves 1)

  • 3 large eggs
  • 30g mozzarella
  • 2 teaspoons fresh pesto
  • 1 handful baby spinach
  • Cooking oil spray
  • Pinch of salt
  • Pepper to taste
  • Mixed herbs to taste


Method

Step 1: Preparing to make your omelette

  1. In a bowl, crack 3 large eggs and mix with a fork.
  2. Add salt, pepper and mixed herbs to the eggs.
  3. Grate the mozzarella.


Step 2: Making your omelette

  1. Place a medium pan on the stove at medium-high heat.
  2. Spray the pan with oil (1 second spray) then add the egg mixture to the pan. 
  3. Once the edges appear cooked carefully flip the omelette to cook the other side.
  4. While the other side is cooking add the pesto to the omelette and spread it evenly.
  5. Add the mozzarella and spinach evenly on top of the pesto.
  6. Once the underside of the omelette is cooked, fold the omelette over and serve.
